Of course, no one realllly knows what "Post Rock" even is but according to this list I like a lot of "Post Rock" albums:

I think "Post-Rock" was a catch-all term for instrumental rock with longer songs that popped up in the '90s. Some of it is great, but there's a LOT of it out there and a lot of is just filler.
Some people credit Swans' Soundtracks for the Blind for creating the genre by accident but I think that's a stretch.

If I think of Post-Rock as being typified by Explosions in the Sky or Godspeed You Black Emperor!, then I think the beginning of the genre could probably be pointed back to some of the proto-shoegaze bands like Dif Juz on the 4AD label.

There are supposedly two strains in popular music criticism, Rockism and Poptimism. Poptimism is a belief that if something is popular then it's good. Rockism is elitist and venerates merit and "authenticity", although what constitutes merit or authenticity are up for spontaneous redefinition by the nomenklatura at any point. Poptimism leans feminine, Rockism leans masculine.
There's always a strain of pop/rock-type music that has elitist appeal, think back to Prog in the '70s, and music genres tend to function as shibboleths for certain types of guys. I think just like knowing what "goregrind" is gets you access to certain cultural spheres, Post-Rock is a way of saying that you are interested in the chin-strokier side of the loud music scene.

There seems to be a Post Rocker pattern these Mogwai's and Mono's follow in their 18-minute "epic" tracks

0-7: softly dicking about with shapeless strings. Really forgettable boring stuff. 8-11: builds up a bit 12-15: cacophonous and shapeless jet engine roar 16-18: repeat phase 1

Explosions in the Sky are closer to shit like Pelican and Russian Circles… boring instrumental bands with no chops. even the drummers in those bands suck. ha, I remember reading Pelican were notorious for having a terrible drummer. I like some Russian Circles, have about 5 of their albums but yeah it can get very tedious and forgettable. And they rarely open the throttle
